To discover that. Any time I had the document redirection policy targeting them home folder and changes occured. Either the policy being removed or the home folder path of the user being changed. The offline file cache in Windows 7 seems to have become corrupted. I was able to reproduce this over and over again. I changed my policy from Target folder location: Redirect to user's home directory which is what we were doing in Windows XP and left everything else the same.
And all of my problems seemed to have disappeared in my test environment. I even renamed the user account to see how it might affect document redirection or offline files thinking it might in a similar way to what was happening when I changed the user's home folder path.
This no longer caused offline file cache corruption or the My Documents folder to fail being redirected. I'm redirecting to a DFS location I don't know if this is going to cause other issues yet and I'm going to test it further.
I'm also going to have to modify my documents redirect policy and change the setting to Advanced - Specify locations for various user groups since the folder structure I have setup for DFS replication is going to require this.
So hopefully it all continues to work when I make those changes. At any rate, I'd love to hear more about this issue. It's been giving me headaches for over 2 weeks now.
